2.燉煮的時候為了讓牛肉軟爛入味 ,我們可以在燉的炖牛時候加一點白糖或者冰糖進去 。記住燉煮的時候盡量不要加鹽,加得太早了。白糖是可以快速滲透到牛肉的纖維裏麵的,誰讓牛肉變得軟爛減少燉煮的時間。加白糖不用怕,燉出來的牛肉發甜加一點白糖是沒有味道的,還有很好的提升作用 。還有想要燉煮出來的牛肉更加快速 ,可以在裏麵適當的加一點山楂和番茄或者茶葉進去也可以加點啤酒 ,這些都是可以加速牛肉軟爛的。

3.另外燉肉前一天 ,先用芥末在肉麵上抹一下,燉肉前用冷水洗掉 ,這樣不僅熟得快,而且肉質鮮嫩。將少量茶葉用紗布包好 ,放入爐中與牛肉同燉煮,肉不僅熟得快 ,而且味道清香。加些酒或醋(按1公斤牛肉放2~3湯匙酒或1~2湯匙醋的比例)燉牛肉,可使肉更軟嫩 。在肉中放幾個山楂或幾片蘿卜 ,可令牛肉熟得快 ,而且可以驅除異味。
