1.豬肉要斜切,豬肉的法具肉質比較細 、筋少,如橫切 ,炒熟後變得淩亂散碎,如斜切 ,即可使其不破碎 ,吃起來又不塞牙;豬肉不宜長時間泡水 。
2.豬肉烹調前莫用熱水清洗,因豬肉中含有一種肌溶蛋白的物質 ,在15攝氏度以上的水中易溶解 ,若用熱水浸泡就會散失很多營養,同時口味也欠佳 。

注意:
1)肉絲的水分 ,較幹的肉絲,最好用水泡一泡。
2)要給肉絲上點漿 ,抓勻掛均 。
3)上好漿的肉絲用溫油滑熟後,再行烹調。

4)也可以把上好漿的肉絲直接烹炒,烹炒的油量要多一點 ,火候要小一點 。
5)肉絲上漿前後可放入植物油或香油,抓均勻 ,然後在用油鍋炒製。
6)在肉絲入味前加點木瓜嫩肉粉(調料商店有售)醃製半小時 ,再行烹炒。
